![]() ![]() There are some small things I would do to help this beer, first the metal flavors could come from your water profile, sparging with water hotter tha 170 degrees or from simply over sparging by extracting roasted tannins. The roasted harshness in the finish is a bit off putting and leaves the mouth feeling the roasty bitterness. The coffee flavor seems to have dissipated and is difficult to pick up behind all of the roasted malts. If this were entered into just the Foreign Extra Stout category (16D) this would score a bit better. Medium bodied, moderately low carbonation, high astringency (from the high use of roasted malts), slight alcohol warming, medium creaminess. Roasted grains are lingering in the finish and turns to a harsh bitterness til the very end. Low green pepper notes, no hop bitterness. Highly roasted malts dominate the flavor. Poured a tan, creamy head that has tight bubbles along the edge of the glass that is retaining very well. Jet black with ruby highlights in the sunlight. Moderately-high roasted grain, moderate dark chocolate, low vanilla and coffee notes, low caramel sweetness. I get a hint of citrus, but the pear fruit really comes across as a watermelon-like flavor which is excellent in this style of beer. However, the beer is marketed to have pear cactus and grapefruit. The beer is labeled as a “gose-style” ale, so I was hoping to have a little more coriander. The coriander is an important component to a gose. The Westbrook Gose is one of my all-time favorite summer beers. You didn't get any of the alcohol in the smell or taste, but I think a lower ABV would make this a better beer.In this post, I’m sipping on one of my favorite summer beer styles, Gose. A lot of people did like this beer but I think the ABV was too high. I think if I made this beer in 2017 I would bring down the ABV on this beer. This was a lot higher than what Beersmith had (6.4%). In the end the FG on this Zombie Dust Clone was 7.97%. I ended up with under 6 gals going into the carboy. Most of the time I want my water level over 6 gals at the end of the boil as I know I will have a lot of left over stuff in the bottom of the pot from all the hops in a beer like this. I am always looking for recipes that have citra in them. I had to brew this in 2016 to what it was all about. This is a clone of the 3 Floyds Zombie Dust - a beer that I have never had.
